Prawn soup

by Sallyo on 29 Apr 2013, 11:28

Fast 7. Quite difficult. Passed the morning in the garden, planting broad beans, erecting a trellis for snow peas, and a frame for prodded peas, digging in mushroom compost and sheep manure. Then I planted 3 rows of peas. That was good and kept my mind off food. Afternoons are always more difficult. We went into town, visited Mum and saw the physiotherapist. I feel a lot better this evening since eating dinner. I made prawn soup. First you make a broth by boiling up the prawn heads and shells with onion, garlic and celery. I used fish stock as the liquid. It didn't have many calories and probably added to the flavour. You simmer it and then strain out the solids. Then you add zucchini and tomatoes and saffron, paprika, cayenne and cook it some more. Finally you add the prawns and parsley and (optional), cream. I only added a teaspoonful each. We also had a very thin slice of bread. It was divine! I am pleased to learn that prawns are low in calories. Roll on breakfast! I think I'll have scrambled eggs!
