Day 1 21 day Vegan Challenge with 2 fast days per week

Ok, back to basics. Inspired by Beyonce's weight loss I've decided to embrace vegan living for a bit. I need to be very strict for a bit as I seem to be slowly but surely indulging and have no control - especially when I travel which I do frequently for work. I have a 3 day wedding next week where I will have to just go with the flow but I'm going to be very careful if I can. Otherwise, I will reset and day 1 will start again. I will allow myself alcohol only but other than that I intend to stay plant based and low carb. Vegan requires cutting out all animal prods and dairy. I really do need to cut back on cheese but I will allow myself milk in my coffee until I can find almond milk. I tried coconut but didn't like it in coffee. Its a bit fattening anyway
So today is also my first fast day in 3weeks. I am reverting to blogging as it seems to keep my focus, lets see if I can create a habit.
So its now 1pm but I still can't eat - I seem to have lost my appetite and feel very bloated. Today I'm making a veg curry
Ingredients
4 cloves garlic (minced)
3 tbsps ginger (minced)
400 grams chopped tomatoes
1 tbsp turmeric (powder)
2 tbsps cumin
1 tbsp garam masala
1 tbsp curry paste
1 tsp chilli flakes
Thats the sauce.
The veg I am using is 320g mange tout
200g asparagus
120g baby corn
200g mushrooms
courgette for zucchini noodles.
I'm hoping it makes 4 portions. In myfitnesspal that adds up to about 120cals per portion so I could easily have 2 big portions and even a little bit of fruit for a desert on fast days. I intend to eat this curry most fast days to keep things simple.
Now I just need to come up with lunches/dinners and breakys for other days. Here goes
