Baked Salmon

I've blogged (and filmed) the way I make baked salmon. I think it's a fairly common way of cooking it, as I've eaten it this way in a number of different places, but it's simple and delicious and doesn't take long. Great for you fish lovers, and would work on a fast day if you save up your calories - a 4oz fillet is lower in cals than I thought :)

Good little film, thanks! I am loving mackerel and herring at the moment - last night had grilled mackerel with rhubarb, a great flavour combo, as the rhubarb made slightly tart, really complements the oily fish. Tried it once with salmon but it didn't work :cry:

I saw in the press today that mackerel stocks are better than thought, as it was taken off the ethical list earlier in the year. This means we can now enjoy guilt free. Mackerel pate anyone?? http://www.telegraph.co.uk/earth/earthn ... -fish.html :like:
