ok @jmousey. Here goes. If you can't make this, then I despair of you.

2.5 cups of flax seeds soaked overnight in water. It will feel like wallpaper paste in the morning. Don't worry.

In the morning, mix with:
Either
Two cups of tinned chopped tomatoes
OR a cup of carrot juice and a cup of grated carrots
Salt and pepper
If you are feeling like you want to make it fancy, add herbs, garlic, spices like smoked paprika, seeds etc etc

Spread on a baking sheet about 0.25inch thick, evenly spread and no holes in the mixture. Score it into shapes of your choice, eg squares, rectangles.

I normally dry mine in a dehydrator but put them in the oven on its lowest setting until dry. You need to keep an eye as I have no idea how long. You will get alot of crumbs and these are nice sprinkled on the top of salad as it is very crispy!

Let me know if you want something more challenging!
Now those cakes look perfectly fine, but as a cake-aholic, it was having to resort to low calorie cakes such as these that put me off other diets. For me, the best bit about 5:2 is being able to eat proper cakes, with icing/buttercream/marzipan/all of the former. Yes, I still can't eat them all the time, but I can have a decent slice at the weekends, and I love it! On fast days, I only eat a protein/veg meal in the evening, so there is no place for cake.
Only just come across this very welcome thread (need one for trifle, now, surely! :grin: ) and I have to say I've eaten more cake in the last two years while I've been 5:2ing (and not putting on weight) than I have ever done!

Here's a very easy vegan chocolate cake that will set you back all of 70p! And it's gorgeous!

I am going to try your Banoffee bread tomorrow as I have chocolate spread AND bananas in the house, a rather unusual occurrence.
I have always gone without cake on fast days knowing that I can have a small slice "tomorrow". The teacake recipe with all that fruit looks wonderful and I will certainly make it when we finish the New Year cake.....(OK its Christmas cake, marzipanned, iced and topped with sugarcraft snowmen).

Glad to see these again, rawkaren. I have a packet of coconut flour and have tried a couple of recipes which I found really unpleasant, so I'd like to give your banana bread pudding a go. Hopefully the coconut flour won't make it taste like salty sawdust as is my experience with it so far.

I do enjoy more 'conventional' cakes on non fast days but I'm always up for something a bit healthier.
