Not losing weight after fast day

I'm in Week 2 of following 5:2. The first week I lost quite a bit of weight after each fast day (3lb on one and 2lb the second time) and didn't put any of the weight back the following day, even though I ate normally. This week's been a different story. I lost 1lb on the first fast day and put 2lbs on the following day - even though I was very careful not to overeat. Yesterday I had my second fast day....and this morning the scales were down just 1/4lb.
I can't figure out what on earth's going on. I was expecting to drop. 2-3lbs on a fast day and then put 1-2lbs back on when I ate normally the following day. But my body seems to be behaving v strangely! It doesn't make sense that I could fast and then not put some of the weight back on, or that I could lose so little after a fast day. I've been weighing out all my food and counting every calorie so know that I've not gone over my 500 calories. Has anyone else had a similar experience or am I just completely abnormal?
