From the 'Eat This, Not That' newletter:

"Strange but true: You can actually burn calories by eating pasta. The trick: you have to put it in the fridge first. The drop in temperature changes the nature of the carbs in the noodles into “resistant starch,” meaning your body has to work harder to digest it (the pasta “resists” being digested, get it?) Cold pasta is closer in structure to natural resistant starches like lentils, peas, beans and oatmeal, which pass through the small intestine intact, keeping you fuller for longer. One study found that including this kind of fiber can increase feelings of fullness by over 50 percent! And another study showed that resistant starches can even help the body burn body fat.

Sinful Tip: You’ve got to eat it cold: Once you heat the pasta up again, you destroy the resistant starch."

Is this true? Where do they come up with these things ?????? :?: :?:

I've heard this about potatoes but reheating supposedly doesn't change the effect. You can heat, chill, and then reheat them and they are better for you...or maybe just not so bad for you depending on your view of potatoes. ;)

I hadn't heard of pasta being like this, but I recently heard that a similar process on rice yields the same results except the rice was cooked with coconut oil. I found this article on chilling and reheating pasta http://www.medicaldaily.com/healthy-mea ... fat-307300

I've heard about this on paleo podcasts and websites like Marks Daily Apple. But not with cooled pasta ( probably because they avoid the wheat and gluten in pasta) I think they say cooked and cooled potatoes and rice have resistant starch that feed your gut bacteria in a good way. Who knows what's really going on in there?
