I am definitely trying this. Sounds like it will be brilliant with my mushroom stroganoff recipe.

I wish we could favourite threads to make them easy to find again.

When I use it with curry, you wouldn't have any idea its cauliflower. It looks like rice, adds texture with a bit of crunch (depending on how long you cook it for). Your mind thinks 'its rice' :)

I have also done egg fried cauli rice which was lovely and made a change from rice.

I am going to mix it with a little bit of rice tonight with Sweet & Sour Chicken (Hairy Bikers). I am not fasting today, but fancied a change from rice and mix things up a bit :)

Thank you, I have now bookmarked it because I'm not losing this one. I'm going to prepare a big batch along with a big batch of mushroom stroganoff (95cals per portion - love mushrooms)and freeze what I don't need straight away then I have quick to cook, heart and satisfying fast day dinners for 150cals or less just ready and waiting to go.
I must put the mushroom strog recipe up here actually, I found it on one of the little 5:2 books that are springing up everywhere for a few quid each. My mum and I have bough several and are sharing them. I'm so proud of how well she's doing with 5:2

Note to self, read post properly... just spent 5 mins looking for the mushroom stroganoff recipe... :wink:

I just made the sweet and sour sauce for the chicken, was in the process of transferring it to another bowl and split half the contents all over the kitchen floor :confused: Not got enough to start again, so plan B... what to eat now....

thanks to this thread I made cauliflower mash last night for my fast day and had it with salmon. Was delicious and really filling!
To my shame as I was cutting the cauliflower I realised this was the first cauliflower I had cooked after I moved out of home many moons ago.
It was a much hated vegetable of mine growing up - was boiled to death by my mother :)

Aargh, yes, boiling to death ruins vegetables! If you slice or crumble cauliflower and roast it with a drizzle of oil it's SO GOOD. Tastes like a different vegetable.

I've been meaning to try this and finally did it today. Made a merry mess in the kitchen (those bits got everywhere. Or I'm just ham-fisted in the kitchen!).

Had been a bit sceptical, if I'm honest, but, wow! I'm impressed! Definitely an acceptable substitute for rice, although I'd describe the consistency more like couscous than rice, but that's fine.

Going to try freezing batches next.

Cauliflower rice, where have you been all my life?! :smile:

Ok two questions : how do you make cauliflower mash?

Also for cauliflower rice - is a handblender ok as I don't have food processor. I've used my grater to make zuchini spaghetti which I'm currently obsessed with but like the sound of cauliflower mash and steak this weekend and the rice would be great for curries

Think it depends on how fine you make the 'rice'. You can do it to whatever consistency you require, so coucous like, or rice like :smile: or big lumps even !

and yes, I did a whole cauli in small bits in the processor this morning at 6.00am (couldn't sleep), and despite being very careful, yes, bits can get all over the place ! Especially rinsing out the processor bowl :wink:

I will have to freeze some down now in portions as one cauli produces a mountain of rice :grin:

Sorry, not used a hand blender. I actually bought a processor mainly for this but also to make pastes, breadcrumbs, those sort of things as well.

Not tried mash yet !

ok well cauliflower mash recipe - this what I found

1 medium cauliflower or 4 cups cauliflower florets
1 1/2 ounces (43 grams) cream cheese
Salt and freshly ground black pepper
Pinch ground or grated nutmeg
1 tablespoon sliced green onion (optional)
Method
Cook Cauliflower
Bring a large pot of salted water to a boil. Cut cauliflower into florets then add to boiling water and cook 8 to 10 minutes or until a fork can easily be pierced through the cauliflower.
Drain cauliflower then throw back into the hot pot (off the heat) and cover with lid. Let stand 2 to 3 minutes.
Mash Cauliflower
Add the cream cheese, a pinch of salt and freshly ground black pepper to the cauliflower. Then, use a potato masher to smash the cauliflower. Finish with a pinch of nutmeg. (If you have whole nutmeg, just grate a little over the cauliflower using a microplane).

I think I will wait to try cauliflower rice til I can afford to buy a food processor or go to my mums to do it. Unless someone says they have had success?

One cauli makes alot of rice, so for the time being, and to see if you like it, have a go at your mums and bring it home with you ! You can then freeze in portions for a quick addition on fast days :smile:
