Parsnip hummus?

Have not tried this yet but it is something different. Maybe to satisfy a sweet tooth? What do you think? Replace the beans in your hummus recipe with oven roasted parsnips.

Sounds great, do you have a recipie. Absolutely love parsnips, squash, aubergine, etc etc etc.

It came thru to my email thru a website called Clean Eats the recipe was a standard hummus recipe except they switched out the beans for oven roasted parsnip

That sounds nice. I need a good hummus recipe. What I make tastes fine, but doesn't have the right consistency. Part of it may be my food processor (I have just a mini one. It doesn't even have a hopper), but I'm sure something is missing, too...

Hmm, sounds intriguing! I'm ashamed to admit I only ever used parsnips once in cooking, and it was used to make a stock for split pea soup. Once the stock was done, I threw it out

I used to do a zucchini hummus which is less sweet but super easy.

oh my. i just tried this and it's gorgeous. I think I'll grill the zucchini first next time (mostly to get rid of water), but even raw: mmmmm
