sweet potato soup

Recipe for the sweet potato soup I made yesterday:
Ingredients
2 red onions, 3 large cloves of garlic, 2 large carrots (approx 200 g), 1 huge sweet potato, 1 large red bell pepper. 2 tblsp olive oil, 1 l of water, 2 vegetable stock cubes

Peel and cut all the veg. Heat the olive oil. First fry the onions and garlic for 3 minutes. Then add all the other veg and fry for another 2-3 minutes. Add the water and the stock cubes and let simmer for 15 minutes. Let it cool down, then puree the soup in a blender or some such machine. Serves four and works out at approx 210 kcal/serving. Lovely comfort food for dreary wintery days.

Guys, I’ve found this recipe of sweet potato soup, its very creamy and delicious. You have to try it:

Ingridients:
• 4 tablespoons butter
• 2 onions chopped
• 1 pond carrots peeled and chopped
• 1-1/2 pounds sweet potatoes peeled and chopped
• 8 cups chicken broth
• 1 tablespoon curry powder
• 2 tablespoons honey
• salt and pepper to taste
