I'm trying to make a salad I pay $7.00 for in a small tub at sumo salad. To0 pricey for me, I know I can replicate it at home.

Its got baby spinach
cubed beetroot
walnut pieces
cubed feta
baked pumpkin cubes.
some chick peas

I know its got a dressing but just cannot figure that part out.

Any ideas? Please.

Have fun and buy half a dozen salad dressings and try out a different one each day.

Or cheaper still make your own. I would probably match that with a dressing of Dijon mustard, xv oil and balsamic vinegar. But lots of other to try just google.

Well, there you go, I looked up recipes similar on taste.com and made a mustard white wine vinegar and honey dressing, love this, could replace pumpkin with sweet potato.

On my beetroot and feta salad, I use reduced balsamic, or pomegranate molasses (which I make myself) You only need a little and it gives it a lush taste.

I usually just have a bottled balsamic vinaigrette with a salad like that - sounds lovely! Although, by the time you buy all of the separate ingredients, $7 doesn't sound so wrong - unless you want to eat the salad for quite a few meals in a row or have a crowd to feed.
