I had one Thai fish cake & rice followed by two pancakes filled with chopped banana & maple syrup. Lovely!

As a matter of interest, did anyone try making pancakes with just s/raising flour and water?
Or were they all made using traditional ingredients?

Overrun with eggs here so went fairly traditional (half buckwheat flour, half plain flour, eggs, milk, water, melted butter).

Oops! I didn't even realise that it was Pancake Day yesterday but everyone seems to have had a good time! Maybe pancakes for us tonight? All your fillings sound just yummy! How great to have a WOE which allows pancakes!!! I love 5:2!

I enjoyed my pancakes. I had 4 with various additions including jam, sugar, lemon, syrup and peanut butter.
