Hi All,

I love cooking and I love to share recipes that I try out, so if anyone is looking for inspiration, have a look here and see if there's anything you fancy. All the recipes will be from the BBC Good Food website and will be low calorie, usually between 200 and 400 calories per portion. I am usually short of time, so I try to cook tasty, healthy meals without too much fuss and with only a few ingredients.

I will have tried out all the recipes I post links to and will comment with any changes that I have made.

Hope you enjoy them.

To tickle your tastebuds, here is a link to the meal we had tonight on a non fasting day, but it could also be used on a fast day. It was absolutely delish.

I used salmon and seafood cocktail which probably increased the calorie content.

I used a little olive oil instead of butter.

Tonight's non fast day dinner was this;

It is a bit of a faff and does seem to create a lot of washing up but is so worth it. I would say, get everything ready before you start to make it, ingredients, dishes and utensils because it is so quick once you get going that there is no time for faffing about. I don't use the oil and I don't halve the chicken breasts, I put them in cling film and bash them flat with a rolling pin.

DD loves anything Italian and first had this in America. I don't know how authentic this recipe is but we love it. DD had hers with pasta and I had mine with spinach. A really filling satisfying dinner that is suitable for both fast and non fast days.

We love eggplant parmesan, basically the same thing made with eggplant instead of chicken. I'm American, and my sister is married to an Italian and this is pretty authentic. You can cut time, if needed by using any good quality jarred marinara sauce. If you can afford the extra calories, this is really good put on a baguette and baked until the bread is toasty.

Tonight's dinner was yummy

I used chicken breasts, frozen onion, chilli from a jar, passata instead of tomatoes and frozen Mediterranean vegetables. Didn't use the kidney beans, sour cream nor bread. The butter beans were great mashed into the sauce.

This is what we had tonight for dinner. It was yummy. Doing 16:8 at the moment so suitable for a feed day I suppose. I grilled the chicken instead of frying it, served it with rice for the family and with salad for myself. It could be grilled without the breadcrumbs for a lower calorie count.
