Hi has anyone got a low cal 200-300 per portion recipe for a filling omelette as I'm struggling to find things for my evening meal as I don't eat all day apart from milk in my tea then I can have a nice evening meal any ideas pls x
I used to do one with 2 eggs (around 160 cals), some milk (say 50ml, around 25cals for semi skimmed) and then fill it with 2-3 cherry tomatoes (8 cals), onion (say 25g at 10 cals), mushrooms (very low cal! only about 13cal per 100g), a slice of lean ham (usually around 13-20 cals a slice depending on type), a bit of goats cheese (not much needed at all - 10g for 27 cals), a chopped garlic clove or two and some mixed herbs.

I fry the fillings in frylite or a few drops of olive oil, then set them aside to make the omelette - returning the fillings to the top of the omelette when almost cooked, then fold it and allow to heat through a bit to melt the cheese. Yum! That's about 260 cals there depending on whether you use oil or frylite - and you can bulk out the fillings a bit if you want to (though I find this one is pretty stuffed!). Serve with a nice side salad to fill up on.

Hope you enjoy it :) For the 40 remaining cals you could have 80g each of iceburg lettuce and cucumber (about 20 cals) and a half tablespoon of garlic and herb dressing or salad cream for about 20 cals too.

An omelette is one of my favourite, quick and easy, low cal meals.

I use:
2 eggs
1 slice lean ham (cut into small pieces)
3-4 cherry tomatoes chopped
Handful of chopped spinach, watercress and rocket prepared salad
Tiny bit of grated ex mature cheddar
Salt & pepper

Put a dash of olive oil in pan, add chopped tomatoes and fry until soft. Add beaten egg, then add ham, rocket salad and top with a bit of grated cheese and salt and pepper. Once underside is cooked, put under the grill to brown the top, (if like me, you prefer it well done).

Slide onto plate and add HP Sauce or whatever seasoning you like.

Comes in at about 300 calories.
Shouldn't have read this!! It sounds scrummy, I can just about taste it.....end of fast day so better go to bed before I cheat! Making this on Wednesday. :oops:
An omelette is one of my favourite meals, particularly if we go out for a meal at lunch time. I like lots of vegetables in mine, so at home, it's a case of whatever veggies I have. I am rather fond of courgettes and dice these, with onion, mushrooms and tomato and cook them in a little olive oil. I then pour the egg mixture (2 eggs and a little milk) into the pan and sprinkle some Cajun spice on top. Very colourful and with a little kick to the tastebuds.
ooh, i really like the idea of an omelette for dinner on a fast day. I find that when I have a bit more fat in the meal (usually cheese--like in the Mexican pizza recipe from the book) it fills me up more.
Same here, omelette is one of my go to meals on a fast day, quick and filling.
