Too much effort!

I'm impressed by the delicious sounding recipes, but find planning inspiring menu's for one too much of an effort! :shock:
I stick to 2 small meals, and so far they don't vary; the first a scrambled egg on dry wholemeal toast for lunch followed by another slice of toast and small tin of baked beans for dinner. Quick & easy! Snacks include a small apple and a mug of 'Options' hot chocolate.
This may sound boring, but it seems to do the trick for me. Of course, I may be crawling up the wall with the tedium in the future, so have a couple of variations up my sleeve...

Hi there

It can be fiddly doing it just for 1 can't it. I'm planning to do the same meals every fast day unless I suddenly feel inspired. I adapted them from the fast diet Radio Times supplement.2 scrambled eggs for breakfast, milk for 2 cups coffee in the morning, lentil soup for dinner and 1 slice dry toast just before bed.

Am on second fasting day and have been ok so far as long as I drink plenty of water and black tea.

I'm cooking for one on my fasts, well actually cooking for 2 - a fasting dinner for me and a normal dinner for hubby. To keep life simple & easy, every 2-3 weeks I batch cook a fasting dinner and divide it up into calorie counted portions to freeze in. I've done all sorts - chilli, ratatouille, chunky veg soup, bolognaise, lasagne - so there's always something easy in the freezer. Another nice easy one is quorn sausages (or a small piece of meat) with steamed veg, roasted baby potatoes, some mashed veg & gravy. Doesn't actually take long (I have frozen in portions of the mash too!).

I started doing this after about 2 months on 5:2, when I got bored of the same old meals I'd been having - stir fries, brown pasta with sauce. These are just as quick but I don't get bored of them :D

Hi & thanks Moogie. That's exactly what I do with family meals!

I can see a time when I'll get bored of my current foods, so will start doing some calorie research...

I couldn't agree more, Ginger, all this faffing around for a 200-calorie meal! (Speaks one who is not keen on cooking, so why would I start now ;-))
I like Moogie's idea of bulk-cooking fast meals so might try that soon, and I have enjoyed steamed fish with veg, so will be eating a lot more fish on fast days, methinks...

Hi, I try to make fasting days really easy. I make a massive amount of veg soup and freeze or use the stir fry method. Buy a big bag of pre prepared stir fry veg, heat a small amount of sesame oil in wok, add chopped garlic, ginger and chilli, chuck in 100g of chicken, then 3 big handfuls of the veg, add a shake of Chinese Five Spice, then a teaspoon of Oyster or Soy Sauce. Lovely - massive plateful. I sometimes supplement veg bag with whatever is in fridge, extra pepper, mushrooms etc. But if I want to be really quick, I just use the bagged veg, the chicken and the Five Spice powder.

I've been fasting since the original Horizon programme and actually look forward to the simplicity of fasting days.
