Borscht recipe 113kcal / bowl

Having looked at different borscht recipes, I made this hybrid soup. It is yummy and only 113 cal per 455g (16oz) bowlful.

I ran these ingredients through caloriecount. Also, my whipped butter recipe is 1/4 pound butter, whipped until double in a mixer with whisk attachment, then 1/4 cup canola oil drizzled in and whipped until double again.

I substituted "better than beef" for the real beef and added a pinch of red pepper (crushed), so it was around 211 cal in all. Very filling. If I only knew how to post pictures! Thanks again! :like:
I bought a bunch of beets last weekend and what a perfect way to prepare them.

With the whipped butter idea what is the theory behind whipping (i.e. when you use it in a cooked recipe) Sorry if that is a dumb question Bobby
Hi Juliana. Not a dumb question at all.

The idea behind whipped butter is that you use less butter. It's really that simple. Since air is incorporated into the mixture, you use up to 40% less butter.

When I whip a quarter pound of butter, and add a quarter cup of canola oil, the calories work out to roughly 50 kcal per tablespoon. Regular butter contains around 100 kcal per tablespoon.

I suppose using less butter would be a fine option but using a full tablespoon is always so fun. :)
