Breakfast in the crockpot

This is primarily for Callyanna and Merlin, as we were discussing it at lunch today.

My cousin in Canada shared it on Facebook and it's courtesy of a lady called Gail Wiebers.

!!! Christmas morning ~ LOVE this kind of breakfast! ~ !!!

Breakfast casserole in the crock pot! Cooks while you sleep!

Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese

Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt....
...and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Some fun variations of this recipe. Before cooking (during prep) you can add:

chunks of sourdough bread
diced chiles
salsa
diced green onions

Is this standard American breakfast food on Christmas day?

Couldn't face thinking about it over lunch-as for eating it..................! I try not to eat breakfast on Christmas day anyway.

I think Jamie Oliver did something similar for his wife and friends sleep over. But it was for when they came in from the night clubs. It was a breakfast omelette. Fry the sausages , then the bacon, mushrooms and tomatoes in a large frying pan. Then crack in the eggs, either whole or whisked, season well and cook with gentle heat till mostly set. Shove under a grill for the top to cook and get some colour. Cut into wedges making sure everyone has a bit of everything.

Sounds yum to me.

It was always a point of controversy that my mother didn't want to cook a big breakfast on Christmas day, as we would eat loads all day, and we needed to get off to church, but my father loved a proper Christmas day breakfast. They're both gone now, but I feel that tension every Christmas day morning. I love a proper breakfast, every day of the year (except fast days of course)

It actually sounds yummy, especially if you add the optional ingredients at the bottom, then serve with a couple of drops of Tapitio picante sauce. :)

And no this is not a standard American Christmas morning breakfast, lol. My house (growing up), special occasion breakfast could be cinnamon buns or fruit filled sweet rolls. Now, a special breakfast would include pancakes. :)

I agree with Betsy - not a traditional American Xmas breakfast at all - just as she says . . sweet rolls, pancakes or waffles.

And by the way, Betsy, hope you and your OH both have a Happy Thanksgiving!!! :heart:

Should feed about 40, @izzy but it doesn't say. Allowing 2 hash browns, 2 eggs per person, say 6, otherwise 1 egg per person, say 12.

Christmas Day here is whichever Children and animals that are around go downstairs and make a breakfast of grapefruit and mandarin bowls, then they bring up the tray with breakfast, a pot of tea and glasses or orange juice and wake us up. We are already awake as no matter how quietly they try to do it, they make a racket, but we still pretend that we are asleep. Well it could get embarrassing if the kids walk in and hubby has been having naughty dreams and the blanket's making a tent!

So the kids also pick a present for everyone from under the tree, small ones, and we all open one present with everyone piled on our bed, before we head downstairs to open the rest.
