Meals under 300 Cals

Hi gang!

In my never ending search for the best "value for calories" style meals, I stumbled across this nice little selection of meals under 300 calories from Glamour magazine.

Nice and easy to follow and of course, the pictures have my tummy rumbling like crazy!

Some of these look great, although I think the calories for the greek yogurt one must be too much - I do something very similar (minus the almonds) and it comes in at less than 100 cals.

Yes you do have to be a bit of a detective with some of the portion counts!

Thanks Jane for that :like: But I shouldn't have looked at that juicy steak on a fastday lol nevermind I've been on my walk 4 mile today have topped up on my water and to kill a bit more time I am off for long soak in the bath bit of a pampering session ( well coz I'm worth it)

Aw yum Sue!

By any chance is is the "Hairy Bikers" cajun chicken? I can't get enough of that!! Fast day here too and just home from AquaFit. Black coffee and Special K chocolate bar. Hmmm, feel like I'm cheating!! :lol:

Hi again Jane no not the bikers version but will look at that now deffo
my own simple version I just butterfly (split) the breast fillet coat both sides with the Cajun spice and George cooks it for me Lol :like:
But I really wouldn't be without my George grill so quick +easy + tasty

It sure does! I think I'll do the same myself!! Here's the recipe I use if anyone fancies it!

Ingredients
serves 4
284 calories per serving
4 boneless, skinless chicken breasts
½ tsp, sunflower oil for greasing
lime wedges to serve

Cajun spice mix;
5 tsp ground cumin
4 tsp smoked paprika
2 tsp dried thyme
2 tsp dried oregano
2 tsp coarsely ground black pepper
1/2 tsp cayenne pepper
1 tsp flaked sea salt

Potato wedges;
3 medium potatoes
1 tsp sunflower oil
½ tsp paprika
½ tsp flaked sea salt
freshly ground black pepper

Chive dip;100g low fat natural yogurt ( I use total 0% Greek yogurt)
2 tbsp finely chopped chives

Method
Preheat the oven to 220ºC. To make the Cajun spice mix, put the spices and salt in a jar and seal tightly with a screw top lid. Give the jar a really good shake. You can store this for several weeks.
Cut the potatoes into wedges and put them in a bowl. Add the oil and toss lightly to coat all the edges. Sprinkle with paprika and salt and lots of pepper, then scatter onto a baking sheet and cook for 20-25 mins until tender and lightly browned.
While the potatoes are cooking, place the chicken breasts between 2 sheets of clingfilm and beat with a rolling pin until the meat is about 1.5cm thick (or cut in half).
Brush a griddle pan or a frying pan with a little oil and place over a medium high heat until hot. Sprinkle 1 tsp of the spice mix over the chicken breast to dust it lightly.
Griddle or pan fry on both sides until the chicken is cooked through and there is no pink remaining. Leave to rest for 3-4 mins.
Mix the yogurt and chive together. Spoon into a pot and divide the wedges between the plate. Add the chicken breasts, serve with the lime wedges and a large salad.


Must pop that up on the recipe forum too, it's delicious!!

Ooh thanks for the link, I believe that our fast day dinners are far nicer than the others. We've got chicken breast stuffed with low fat mozzarella, wrapped with bacon and sweet potato wedges. I am looking for recipies to use up our many many home grown courgettes. Any tried and tested ideas?

For a courgette lunch for one, sometimes I'll chop one up, saute it a bit with some seasoning (either herb based, or something spicier, your choice) then add a beaten egg/eggwhite mixture (1 whole egg for flavor, with 2 extra egg whites for volume), and finish it off as a fritatta. You can add in other stuff as you like...diced potato, green peas, chopped tomato, a sprinkle of cheese, it's all good!

Carieoates, I have developed several courgette recipes over the years, 1 the same as gingertea (above) - for a fast day lunch saute a bit of onion and garlic (I do it in the microwave in a bit of water) then add plenty of chopped courgette, today I put in some broccoli plus stalks, sometimes I add in spinach or any low calorie greens, celery, add either water or stock cube and water, cook till vegs not overdone, then blitz the lot, serve with a dollop of low-fat yoghurt and some chopped mint (you can add herbs or mint before cooking if you wish). Very good and fresh and low calorie.
You can also stuff courgettes if they get a bit bigger with either a bolognese type sauce (scoop out middle of cooked courgettes, fill with bolognese top with cheese and finish in oven. Or same with pork sausage meat and onion, serve with home-made tomato sauce.
