New recipe- Green Papaya Salad

I guess this is one for the Southern Hemisphere fasters with our summer coming up!
I've eaten this in Fiji and had it at a Thai Restaurant last week.
Apparently the papaya is really good for digestion.
I've tweaked it for a fasting day- I had it tonight and it was yum and filling.

Green papaya salad.
1/2 green papaya,200g, peeled and shredded
(I used a Mandolin- there are demonstrations on the SBS recipe site.)
120 g shredded carrot
90g diced beans
6 cherry tomatoes, quartered.

Dressing
Juice of a lime
30ml sweet chilli sauce
2 tablespoons fish sauce
2 Tablespoons palm sugar(or white)
1Tablespoon grated ginger
1/2 finely chopped red chilli

This recipe is enough for 3 good serves, at about 150 cals per serve.
I had it with some char grilled sliced chicken and extra beans
I have never heard of green papaya, is the flesh green? Is it an unripened papaya? Off to google I go ...... lol
mmmm - sounds nice, and enough calories for some protein too - may try this for Octobers fast days, on the advice of a friend who has done really well on 5:2 I fix my fast day eating for a month ie 8 times then change - it seems to work for me and her!

No, it's white!
I hadn't used it before either but my family loved it as well as me so that has to be a plus. :smile:

Edited to say it is dark green before you peel it, and hard. Unripe but apparently still good for you.
I ate something very similar to this years ago made by a Burmese friend. She warned us to have small helpings only as it can upset your tum, especially if not used to it. I loved it, it was unlike anything I'd eaten before, and I was a bit greedy with it. Happily, no ill effects. Wish I could find a green papaya here. :smile:

French green beans.
I'm making it again tonight- the other half of the green papaya seems to have lasted ok in the fridge :smile:
