Nice snack for fast days

I have always loved Apples, cut in slices and slathered in peanut butter.

For my fast days, I make a great low calorie version of this.

I use a really great product called PB2, here is the description of it, from their website:

PB2 Powdered Peanut Butter
PB2 is made with premium quality peanuts that are slow-roasted to our specifications and pressed to remove the fat. All natural with no artificial sweeteners or preservatives. Same consistency as full-fat peanut butter with all of the roasted peanut flavor, but with more than 85% less fat calories.

It is 45 calories for 2 TBLS, and when you mix it up with a bit of water, becomes the same consistency of regular peanut butter, but 45 calories vs 190 calories for regular peanut butter.

I cut my apple into slices, and dip each slice into the tasty peanut butter dip. I use a bit more water, than I would use to make peanut butter as for a sandwich, which creates more of the dip and is plenty to be used for all my apple slices.

This whole snack is about 115-120 calories depending on the size of the apple. But its very tasty, takes a while to eat, is great to snack on while watching tv, or reading, or just eating.

Enjoy!

Just checked on Amazon. Phew, that is pricey. How much does it bulk out. Jar for jar, how many jars would this one jar of powder make of the sticky stuff.

PS. I love peanut butter. I have now decided tomorrows, post fast, breakfast is going to be a slice of toast, or two. One part slathered in butter and raspberry jam, the other in butter and peanut butter.

My favorite fast day(well, anyday) snacks are salted pistachios in the shell at 40 calories per 12 nuts (guilty secret: I suck on the shells for the salt  ) and a cup or two of nonfat organic chicken broth seasoned with spices and minced celery, carrots, green onion and lemon juice at about 10-15 calories per cup. Both of these snacks are very satisfying.
