5:2 Diet Recipes

For a while I've been making chicken noodle soup. So delicious and so simple.

Basically it's chicken breast, carrot, leek, knorr chicken stock and some spaghetti. I have adapted it as follows for 5-2

2 chicken breasts - skinless
2 carrots - peeled and chopped or grated
1 leek or onion
2 knorr stock cubes

Still tastes as beautiful as ever and just missing the pasta (which I don't miss). Rocks in at about 500 calories for a pot, I made it in the slow cooker today (just to make life even more simple). Then I can eat it all day until the pot is done.

Anyone have any other ideas for slow cooker 5:2 faves or suitable soups?

I make something similar for fast days but I load mine with all sorts of veg - whatever I happen to have but not potatoes - and I add some barley or lentils. I chop the chicken breast into the finished soup. It's around 150 calories per bowl and I have that for my one meal on fast days. It's never exactly the same twice as the veg varies every time. A carton of passata rings the changes....I don't worry about a few calories more or less as it will always be well under 500 per bowl.
