Overnight Oats

I am fed up having toast and peanut butter for breakfast. Even though I go for wholemeal seeded bread it just sets off the carb cravings for the rest of the day.

I remember a number of years ago going on a spa weekend for my 40th having a healthy version of Atholl Brose, which is a traditional Scottish drink made from oats, cream and whiskey. It's ok @Janeg, even if I liked whiskey I still couldn't have it for breakfast but this is what I found -

So last night I made my first overnight oats. Using a jam jar I mixed half a cup (about 120ml) of jumbo rolled oats, half a cup of milk and a large table spoon of greek yogurt. I added some dried chopped apricot and sultanas. Then I put the lid on and put it in the fridge.

This morning I added a drizzle of honey and some toasted flaked almonds.

Wow, it was delicious. The only thing is it was too much so I'm going to use smaller portions tonight. Also it was quite thick so I might use two table spoons of yogurt. Tonight I might add frozen berries with flax seeds added in the morning with a bit of honey of course.

I thought I would pass this on to all of you who are like me - I like breakfast but I don't have a lot of time in the morning and I no longer want cereal.

Just being nosy, but do you have it hot or cold?

I saw the recipe on the net last summer and enjoyed it cold as well. The blogger made it in 5 small jelly jars so she could grab and go every morning.

And i have recently discovered pomegranates and mix them with oranges for a refreshing salad.. but hey this looks fabulous

looks delicious @wildmissus I might give it a try very soon.

My daughter throws pomegranate onto nearly all her salads, not only is it tasty, but its also very colourful, it's nice on top of some lightly steamed asparagus.

How lovely. It sounds like Bircher muesli that I used to make. Oats,grated apple and some sort of liquid I think milk,yoghurt and a bit of cinnamon.

oh yum, without the honey though @wildmissus I live cranachan and when it gets made for special occasions, I love it for breakfast.
It's oatmeal, toasted in a pan, a wee drop of dark brown sugar and cream. slung together and kept for a few hours or overnight. Eaten either communally, adding raspeberries, sugar to taste and whisky, or I put in the rasps, serve in bowls and you add the whisky and sugar. or not. The oatmeal mix really thickens up and stays nutty and knobbly, so I loosen it with semi skiled milk.
Not exactly a fast day breakfast but sooooo good.

Love Bircher muesli too and have avoided Atholl Brose due to the honey *doh* as cranachan should be honey too.

Those pictures have certainly put oats in a total other category for me. They all look delectable , maybe not the green one. I do like spinach but not sure with oats.
Do any of you know the difference with steel cut as to rolled oats in taste, texture. Do not think Australia sells steel cut only rolled. Are they better?

Who would have thought I could get excited about oats, its all about the add ins I think.

I don't eat until the evening,and need to be careful about carboyhdrates, but these look lovely and could make tasty desserts. I think that I'll experiment. I love cranachan, so I'm sure that these will work for me for special occasions. I think I like the idea of something with avocado,lime and orange.

What appealed to me was that you can add whatever you like and make it as healthy or as unhealthy as you wish.

@zamale, I believe steel cut oats are the least processed so the most healthiest and 'good carb'. I can't get them in our local supermarket so the next time I'm near a health food shop I'll have a look for them.

I make this sort of thing or bircher muesli often but rarely remember to do it the night before. My usual tactic is to do it at 6am and then eat it a couple of hours later. That enough to make quite thick and creamy. I usually add almonds, linseeds and maybe pumpkin seeds, it depends what I have to hand. I don't add honey as the dried fruit is sweet enough, and I usually grate an apple or chop a pear into it before eating.

Rolled oats have been steamed and flattened, so quicker to cook but more processed than steel cut. There is a great chart somewhere with the different oat versions, will see if I can track it down and link to it.
Chia seeds would be lovely with the overnight soaked oats.

Oh yes! Thank you @wildmissus as you know I don't have breakfast but I do miss my yummy porridge. This would be great as lunch or as a dessert or even a treat. I will have a go this morning and have it for dessert this afternoon. Thanks very much, will be worth using the carb allowance on :smile:
