Just a lovely simple recipie using the ready made quorn bolognese sauce.
This is one makes two portions, I had it with some steamed fish, or some chicken.
Ingredients
Pkt of quorn simply add bolognese sauce 118cals. (On offer in sainsburys at present 3 for 2)
One Aubergine, sliced, sprinkled with olive oil and griddled. 350gm 88cals
Olive oil 1tbsp 119 cals
One pack of low fat mozzarella. Sainsburys be good 306cals
Cover the bottom of the dish with the griddled aubergine, then layer the sauce on. Add mozzarella. Then bake in the oven till bubbling and cheese has melted.
631 cals in total or 315 a portion. Unfortunately the mozzarella can go chewy when re-heated. So you could build and fridge the unused one. And I add a small sprinkle of Parmesan to taste.
