Such a lovely simple filling soup,I just had to share. .
Just made a big pot of this, it's sooo delicious and even Beloved agrees!
I don't use any fats,cream or milk in the making, making it perfect for a fast day lunch

Ingredients: (serves 3)
3 large carrots (30 cals x 3 = 90)
1 onion (40 cals)
2 chicken stock cubes (8 cals x 2 = 16)
Coriander (fresh or dried is fine - allow a calorie or 2!)
Salt (optional, I add about half a tsp)
Fresh black pepper (optional, I go wild with it!)
Method:
- I start by popping my stock cubes into a large mug and add in boiling water. stir thoroughly and pop into a pot. This way there is no need for any fats to fry the onions.
- Chop onions and add to stock, followed by the carrots, as finely sliced as possible.
- Add plenty of freshly ground black pepper,yum!
- When onions are soft, add enough water to cover the ingredients. Add salt.
- Allow to simmer for, well, until everything is lovely and soft.
- FINALLY add the coriander. I add about a teaspoon if dried. If I'm using fresh, I just tend to go wild!
- Blitz in the blender.
-Serve piping hot with a coriander leaf for garnish.
