Soup Glorious Soup!

I am probably not alone in my love of soup on a fast day, it's quick, easy, full of nutrients but not calories (well that depends on the soup of course).

On thing's for sure, there are so many options out there but I still find myself turning to the same sorts of things again and again. I branched out on Monday night with some Ras El Hanout in my butternut squash soup and topped it with a salsa and it was really lovely.

Do any of you have any other ideas for hearty soups that will fill me up and keep me warm as the Welsh weather (code for cold and dreary) sets in??

A good combo is carrot, ginger and coriander (fresh leaves).
I also make a pumpkin soup of various pumpkins, butternut squash, sweet potato combos (always with loads of onions and garlic) all cooked up in water and blended - great for when I haven't made stock recently.

Never had salsa in soup before ! Interesting.... :)

Check out the recipe section on the forum, lots of soups in there.

For Fast days I make a Spicy Tomato based soup with some onion, leek, celery, mushroom, courgette (good for extra bulk) and some celeriac, sweated off then add a can of chopped tomatoes a couple, of stock cubes, water and smoked paprika. Whizzed together it make a thick soup at about 70 cals per portion.

For slightly more calories there is always Pea (and Ham) soup :smile:

I can't remember the calories for any of them, the first and last ones are around 150 or less, I'm not sure about the sweet potato one, I haven't done it on a fast day!

Making soup in the background as i type. My infamous pumpkin and orange soup from an American cookbook i have . basically sauteed onion, butternut pumpkin cooked in chicken stock and with juice of say 2 oranges. moosh it up and then,+ if not fasting add cream :cool:

ive never found another pumpkin soup recipe online with orange juice. it adds a sweetness that is so good for it.

The pumpkin i used was from my last summer harvest of 23 pumpkins.. not bad for a tiny suburban property

btw you can pick up the recipe from this book America The Majestic on Amazon really cheap. Huge book with loads of pictures, recipes and interesting write ups on regions of American cooking.

Ooooh, great idea for the orange juice for pumpkin soups - going to give that a try. And great pumpkin harvest!

I make a cheesy taco soup that has salsa and Rotel. It was originally a low carb but somewhat higher calorie soup recipe I found online. http://genaw.com/lowcarb/creamy_sw_taco_soup.html

But, I made substitutions like laughing cow cheese wedges, no heavy cream, smaller portions of ground turkey instead of the lb of ground beef. I use a garlic or onion bouillion, onions, green pepper, flax seed, cheese wedges, salsa, and rotel.
