This is an adaptation of a recipe in the donna hay magazine, # 69, June, July 2013. I'll put the original measurements/ingredient in brackets for a feast day. Serves 2.
half a tablespoon of olive oil
half a brown onion
clove of garlic
half a tablespoon of smoked paprika
1 cup tomato puree
500 gm water (chicken stock)
1 chicken breast fillet, 180 gm
salt and pepper
200 gm red kidney beans - cooked
creme fraiche and coriander to serve. (sour cream)
The original recipe has 2 coriander roots, finely chopped, but I don't have any so I left them out.
heat oil and cook onion and garlic 3-4 minutes. Add paprika and cook another minute. Add tomato, water, chicken, salt and pepper; bring to boil and cook 10 minutes until chicken is cooked through. Remove chicken and shred. Return chicken to pan with beans and cook a further 2 minutes or until warmed through. Divide the soup between bowls and top with creme fraiche and coriander.
420 calories, per serve
The chicken stock was 90 calories, so would have pushed it over the limit, so I thought water would do as well. The creme fraiche -only a tablespoon- is only 35 calories and I thought it was worth it. Also I've just made my own creme fraiche and I want to eat it!
