Recipe for the sweet potato soup I made yesterday:
2 red onions, 3 large cloves of garlic, 2 large carrots (approx 200 g), 1 huge sweet potato, 1 large red bell pepper. 2 tblsp olive oil, 1 l of water, 2 vegetable stock cubes
Peel and cut all the veg. Heat the olive oil. First fry the onions and garlic for 3 minutes. Then add all the other veg and fry for another 2-3 minutes. Add the water and the stock cubes and let simmer for 15 minutes. Let it cool down, then puree the soup in a blender or some such machine. Serves four and works out at approx 210 kcal/serving. Lovely comfort food for dreary wintery days.
