Can someone recommend a simple low calorie vegetable soup recipe (around 200 calories per serve) for my fast day lunch? Maybe with a slice of wholemeal toast as well! I was once told that Weightwatchers used to recommend vegetable soup as a 'filler' as it was only 1 point. Not sure if that is correct.

You can make vegetable soup just by boiling all the veg together in a pot of water with a stock cube without pre frying the veg in oil. You can blend it to make it smooth or leave it chunky, however you like. I usually blend vegetable soups and leave meat ones chunky.
I make soup such as:
courgette, carrot, tomato, onion, garlic, coriander seed, bunch of fresh coriander, salt&pepper and a chicken/veg stock cube.
You can weigh the veg to get the exact calories, but i just use 1 of each, like 1 courgette, 1 carrot, 1 onion, 1 large tomato or 2 smaller ones ect.
The whole pot of soup is about 200 calories. If you want to be exact then weigh the ingredients before cooking.
