Spicy courgette soup - 97 cals
02 Mar 2013, 12:51
Just made a big pot of this. Makes four big generous bowls at 97 cals per bowl.
It's a lovely warming tasty soup.

2 tsp oil ( I used coconut oil as it goes well with the spices)
1 medium onion chopped
2 celery sticks chopped
3 medium carrots chopped
3 large courgettes chopped
1 clove garlic minced
1 tablespoon curry powder or garam masala (I used madras powder cos I like it spicy!)
1 teaspoon ground cinnamon
1litre chicken or veg stock made from 2 stock cubes

Heat the oil in a large pan and sweat off the garlic, onion, celery and carrots for a few minutes.
Add the courgettes and cook for a couple more minutes.
Add the spices and cook for 2 mins stirring them through the veggies.
Cover with the hot stock, stir and bring to the boil.
Simmer for about half an hour or until the veggies are nice and tender.
Blend well and serve.

Now that sounds like my kind of soup.
Thanks for posting.
I'm going to make it this week, but will have it on a non fast day as I like to use my 400 calories on solid things!
