"Pond Weed Soup" - 76 cal

I tried to jiggle about with a couple of soup recipe to suit what I had left over in the fridge with the proviso that it needs to be low calorie. It is really rather good and the total calorie amount is 533.5 for the whole lot. We had 7 large portions which I work out to be 76 calories a portion. I was absolutely stuffed when I had it with a couple of slices of bread.
I thought that I'd share it with you.
The name is what my children humorously called it, so don't be put off! It could just as easily be called "spicy courgette and spinach soup" if the AKA puts you off! :lol:

3 courgettes chopped ( mine weighed in at 642g) 103 kcals
250 g bag of fresh spinach (62.5 kcals)
3 onions chopped (mine weighed in at 290g) 89 kcals
2 garlic cloves chopped (mine weighed in at 6g) 9 kcals
175g green lentils (mine were from M&S) 182 kcals
Spray oil just a tad (less than the 10 kcals for 5mls quoted)
1tsp Rose Harrisa paste (44 kcals - it's what I had in the fridge, but use whatever spices you want)
2 OXO chicken or vegetable stock cubes 30 kcals
Zest of 1 lemon. 2 kcals
juice of 1 Lemon 20 kcals

METHOD
Soften the onion & garlic in a large lidded pan, using spray oil.
Add the chopped courgette,washed green lentils, Harrisa paste and oxo cubes (dissolved in 1litre of boiling water).
Simmer for about 20 mins.
Add the spinach until just wilted ( a few minutes)
Add the lemon juice and zest.
Purée together

It looks a little like "pond weed" hence the name my children gave it.
It was devoured today by me as a fasting supper but also my hungry non-fasting and particularly fussy friends and family.
Add more spices, if it suits your taste.
