5:2 Diet Recipes

I love making soup. My friends call me the Soup Dragon (that ages you if you also remember The Clangers!!)

This makes 3 goodly servings

400g carton chopped tomatoes
125g diced onion (2 small ones)
50g red split lentils
1 garlic clove
1/2 tsp dried crushed chillies (more or less according to taste)
5g Marigold veg stock powder

Put everything in a pan with approx 1 litre boiling water. Bring to the boil and simmer until lentils are soft (about 20 mins)

Blitz in a blender or with a stick blender. Add more water if it's too thick for your taste. Add salt/pepper if you need it.

Total recipe calories are 300. I split it into 3 so 100 cals per bowlful for me.

Freezes well. Enjoy :smile:

Thats sounds lovely, and I love homemade soup. 1 question, where will I get Marigold veg stock powder? I have the Knorr chicken stock in the house would that work?
I've also made it with a whole red pepper but didn't have one in the fridge today. That would take it up to 345 calories or 115 per bowl.

You can get the Marigold veg powder in the supermarket beside the Knorr cubes. I use it cos I have a veggie son. 5g or 1 tsp is 12 calories so just see what calorie value is in a chicken stock cube and adjust accordingly
