I make a huge big pot of vegie soup then portion it up and freeze it. It is then easy to pull out of the freezer on fast days and you can make 2/3 weeks worth at once. I take what ever I have in the fridge, look up the cals - yeah not an exact science with veg (small medium or large carrot etc) but I err on the plus side to make sure I don't go over my daily cals. My latest version has pumpkin, cauliflower, eggplant, cabbage, onion and some frozen spinach. The total came in at 400 cals and I had 6 portions (about 2 cups each)of lovely, healthy, tasty green soup. I have this for breakfast and it leaves me a good 400 cals for dinner It's filling and healthy.

I do the same and use what ever veg needs using in the fridge. Wonderful way of using up veg and filling up big time without pigging out on calories

On my fast day today and I have made the veggie soup - pak choi carrots leak garlic one hot fresh chilli pepper (but not too hot) green beans mushroom and around a handful of red lentals . Throw it all together with water and some Marigold bouillon powder and cook for 20 minutes until the veg is cooked. Add salt and pepper to taste and enjoy. Delicious with enough to freeze for Thursday
My version of the Veggie soup uses, Onion, Leek, Celery, Celeriac,Garlic, courgette, a big tin of chopped tomatoes, a few chopped up Peppadew peppers, 2 Knorr stock cubes, and some smoked Paprika. It makes 6 portions and weighs in at about 70 cals, on Fast days I have it with 100g of Slim Rice.

Sounds good with the smoked paprika. I have never used celeriac. What does it taste of?

Celariac is a knobbly root vegetable about the size of a swede and tastes slightly of celery. Its a useful one as it has a potato ish texture (ideal for adding some bulk) but is lower in carbs than potatoes

Thanks Sians - i will try it- my local farm shop sells celariac. You fast on the same dtays as me so like you i am looking forward to renewing my acquaintance with calories today, food always tastets so. much better after a fast
