5:2 Diet Recipes

I made this yesterday and it was easy and yummy.

1 clove garlic 4kcal
1 Large onion approx 80kcal
200g frozen peas 140kcal
50g bagged watercress,spinach and rocket salad 30kcal
1 kallo vegetable stock cube 7kcal
500ml boiling water 0
Total261Kcal

Chop the onion and garlic and put in a medium pan with the other veg.
Mix the stock cube into the hot water and pour over veg.
Simmer over a medium heat for approx 10mins or until onion is starting to soften.

The batch I made measured 800ml in total.
I had a portion of 300ml which comes to 97kcal
(I will use the rest on my next fast day Thu.)

I also topped it with 20g of hard goats cheese (70kcal) for some protein and fat which seems to stave off the hunger longer. That made my lunchtime meal 167 kcal :smile:

Can you freeze this soup ?
Haven't tried freezing, but I would have thought so Peppercorn : )
