5:2 Diet Recipes

Here's a recipe I made up for my Day 1 fasting day as I wanted something that was tasty and filling, but didn't use up all my calories in one go. I analysed it at myfitnesspal.com.

It was tasty enough that I thought I'd share it here for anyone wanting a vegetable soup recipe without going to the hassle of working out how many calories it contains!

I had two serves in one day and kept two for today's fast. I think it would freeze okay in serving sizes too.

For a completely vegetarian soup, you could swap vegetable stock cubes for the chicken stock cubes. It's just that was all I had in my pantry at the time!

Cabbage and Carrot Soup - 116 Cals per serve

Carrots - Raw, 2 cup, chopped (105 cals)
Onions - Raw, 1 cup, chopped (67 cals)
Woolworths - Baby Spinach (Fresh Pack), 40 g (10 cals)
Oxo - Chicken Stock Cube, 2 Cube (5.9g) (40 cals)
Chopped Tomato - Roma Tomato (Per Nutritiondata.Self.Com), 4 tomato (128 cals)
Garlic - Garlic (1 Clove, Raw), 2 clove (3g) (8 cals)
Cabbage - Raw, 4 cup, chopped (85 cals)
Spices - Mixed Dried Herbs, 2 tsp (20 cals)

Add all ingredients into big pan with 5 cups of boiling water, bring back to the boil and simmer until cooked to your liking. Add pepper to taste.

Total Calories = 463
Calories per serve = 116 (Serves 4)

Per Serve: Carbs 26g/Fat 1g/Protein 6g/Sugar 16g
