My family and I really enjoyed this low calorie soup.
Ingredients / Method
1 onion chopped and sauted in
1 tablespoon of Olive Oil
2 garlic cloves chopped and added
1/2 Bunch of Celery washed & chopped and added to pot - I used a lot of the leaves too - not the very dark tougher ones
2 spring onions washed & chopped & thrown into the pot
2 small potatoes (mine were about 200gms total) - this adds to the creaminess.
6 to 6.5 cups of cold water (or chicken stock)
Bay Leaf (I put Bay leaves in everything)
I used 3 or 4 teaspoons (cant remember - just do it,according to your taste) of chicken stock powder - about 16 cals for the one I used.
Simmer until soft - about 30 mins
Pepper to taste (I used a whole fresh chilli to the pot and removed it after cooking and before blitzing for the little bit of "zing" :lol:
Remember to take out the Bay leaf before you blend. :wink:
This made 6 generous portions - like about 3 soup ladles full per portion.
I worked out the lot to be about 400 calories
So one portion 67 cals.

I am eating so many soups now and this one sounds just up my street, particularly as I am trying to avoid the creamy ones. Thank you :smile:

I'd flavour it with veggie bouillon powder - which would make it vegan! :like:

I just love celery - it's such a tasty veg, when cooked, and only 8 cals per 100g!

Thanks, I'm definitely going to try it!
Made this soup today.I added two triangles of light Laughing Cow cheese.They are 15 cals per triangle.I will make this again as it was so tasty.

This sounds yummy. I have recently invested in a soup maker, & have been trying different soups every weekend, & i think this will be my next one to try. :smile:

Looks great. Another effective way of making a soup more "creamy" is adding cauliflower (perhaps a medium head in this case) and a large handful of mushrooms and omitting the potato. I think cauliflower has less than half the calories of potato by weight........
Today I've made a similar, very simplified version, just for me, with what was in the fridge that would work.
Thought I'd post it here so all the variations are together :smile:

Chop 2 sticks celery, 180g celeriac, 35g carrot, quite small (or process).
Put in saucepan with (didn't measure the water but probably) 1/2 litre boiling water, 1 teasp Marigold veg stock powder, and a small piece of chopped fresh ginger.
Bring to boil, cover and simmer for about half an hour then blitz with stick blender. Taste, adjust seasoning and add more water if wanted.

I've just had a big mugful and there's at least as much again left, and it's yummy :smile:
60 calories total:

84g celery 6
35g carrot 10
180g celeriac 32
1tsp Marigold 12

Fennel would be good to add or substitute too, and it's only 11 cals per 100g.
