I've just made the most amazing tasty, simple and healthy summer lunch! I'll certainly be eating this again.
(Serves 1)
40g feta cheese, cubed 110 cals
50g Santini (baby plum) tomatoes, halved 10 cals
25g sweet mini pepper, sliced in rings 10 cals
10g red onion rings 5 cals
20g mixed olives, halved 45 cals
Olive oil
I put the feta cubes in an earthenware dish (you want something you can eat out of) and piled the other ingredients on top. Finish with a tiny drizzle of olive oil and a twist of black pepper. Bake in a hot oven for 15 - 20 minutes, until the veggies are roasted and the cheese softened.
I ate this with a wholemeal mini pitta bringing my total calorie count to around 225. Delicious and very satisfying.
