5:2 Diet Recipes

300g leeks
150g Celeriac
200g carrot
150g chicken
2 stock cubes
1.5 litres water
Chopped fresh parsley
2 tbsp oil

1. Soften leeks, celeriacs and carrots in oil

2. Add stock and finely chopped chicken

3. Cook until carrot soft and chicken cooked.

4. Turn off heat and then add chopped parsley and black pepper to taste

5. Enjoy!


I divided this amount into 4 portions, making it just 130 cal a bowl.

A very easy and tasty soup for a fast day!
