Fish, tomato and spinach curry

Made up this one and it was yummy and filling and only 205 calories per serve. Recipe is for 2 persons. So only eat half if just for you. Makes a nice big bowl.

300 grams cod fillet (240)
2 garlic cloves (4)
4 tspns chopped ginger (8)
1 tin chopped tomato (80)
1 medium onion chopped (44)
2-3 tspns curry powder (to taste) (0)
2 cups chopped spinach (14)
Pinch salt / pepper
1 sec spray oil (10) can be omitted
1 & 1/2 cups water
2 tbsps low fat plain yoghurt (10)

Spray pan if needed and soften onion, garlic and ginger. Add curry powder and cook for 2-3 minutes. Add tomatoes, water, salt and pepper. Simmer for 25 minutes. Add fish cut into chunks and spinach. Simmer until fish cooked. Take off heat, mix in yogurt and serve immediately.
205 Calories is a good range and well within the 500/600 limit set out at the start of the IF. I'm a big fan of curry so this gets my vote!
Yum! I missed this thread when you first posted it, and it sounds great. I'll be trying that in the next couple of weeks for sure.
Hubby and I have just had this for dinner, and it was absolutely delicious! We had a little more fish, and a lot more spinach, and even he was happy just having it as it is, without rice. We will definitely have it again!
