Beef and veg chilli - 255 cal

Recipe for 2 x big bowls. 255 cal per bowl.

150g lean beef. Finely chop / mince using sharp knife or chopper. Or extra lean minced beef if can buy.
1 medium onion finely chopped.
2 garlic cloves.
1 cup chopped carrot
1 cup chopped zucchini (courgette).
Can of chopped tomatoes
1 tspn Italian dried herbs, 1/2 tspn cumin, 1/2 tspn dry coriander, 1 tspn paprika.
1-2 tspn chilli flakes (to taste)
Pinch salt and pepper
1 table spoon tomato paste
3 cups water
1 second spray oil

Spray pan and soften onion and garlic. Add beef and brown. Add tomatoes, vegetables and dry herbs, salt and pepper and cook for 5 minutes. Add water and tomato paste and simmer uncovered for 25-30 minutes. Sauce should thicken but not become too dry (add a little extra water if this happens).

Can serve in bowls topped with 2 tablespoon of low fat plain yoghurt but it will cost you an extra 10 calories!
This looks nice I might try that, what do you have with it if I have had pasta for lunch? I might get some shirataki noodles today.
This sound yummy.
El Duderino you could try finely shredded white cabbage, that makes a good low calorie alternative to noodles.
looks good, could also substitute the meat for beans or capsicum if you wanted this to be even more low calorie or vegetarian and then serve it with salad and some low calorie crackers or nachos (some are less than 100 cals) for crunch.
