Chicken Saag
11 May 2013, 09:59
For Indian curry lovers. Serves 2 at 316 calories per serve. Will make a lot of sauce. You could save on calories by reducing sauce. But I eat this with a spoon from a bowl and the sauce is tasty and filling. The perfect way to eat your spinach!

230 grams skinless chicken breast meat cubed (250)
1 medium onion chopped (44)
2 cloves of garlic minced (8)
4 Tspn minced ginger (8)
1 kg of spinach chopped (240)
1/2 can crushed tomatoes (40)
Garam Marsala 1/2 tspn
Turmeric 1/4 tspn
Ground coriander 1/2 tspn
1 whole clove
Cayenne pepper 1/4 Tspn
1/4 Tspn salt
1/4 cup water
1 tbsp water
3 tbspn low fat (2 per cent) milk (22)
If like spicier 1/2 Tspn chilli flakes
2 x 1 second spray olive oil (20)

Spray pan (1 second) and sauté chicken cubes until slightly browned. Set aside. Place spinach in pot with 1/4 cup water and bring to boil. Remove from heat, cool slightly and blend to paste. Spray pan and sauté onion, garlic and ginger. Add tomatoes, turmeric, coriander, salt, cardamom, clove, pepper, chilli (if adding), and cook for 5-8 minutes. Add spinach, 1tbsp water, milk, garam Marsala and cook for few more minutes. Add in chicken, warm through and serve.

Sounds fab, but OH not a spinach eater, can I do this without?

Saag is a spinach based sauce. You might like it in this spiced paste form. But I guess you could add extra tomatoes instead. But I would ditch the milk then.

Looks nice. Did you have it on its own? Think I might add some cauliflower rice

Oh, I could make the sauce and stick in some panzer instead of chook! That would be most lovely.

Guys I just had this again and I want to suggest some edits. 600 grams of spinach still makes plenty of sauce (big bowl of saag) and yet enables calories to be reduced to 268 per serve. And if you replace the low fat milk with 2 tablespoons of light coconut milk (approx same calories) it is even yummier.

Made this for dinner tonight. The whole family enjoyed it. Thanks TM.

How big is a UK tin of tomatoes? I suppose I could just sub in some fresh chopped tomatoes to 40 calories and sautee them with the onions.

Thanks for sharing, I really love indian food :-)

I'll bet it's lovely garnished with a bit of raita. 1 oz lowfat yogurt is 17.5 calories. Grate in a bit of cucumber, add a tiny bit of chopped cilantro or mint, and a whisper of cumin and it can't be more than 20 calories :-)

UK tins of tomatoes are 400g

The recipe sounds delicious. Would it be possible to make it with kale instead of spinach? I have some kale to use up, so I think I'll give it a try tomorrow night (fast day).

Yummy recipe. TM is a kiwi Im pretty sure!!. Here the usual size for a tin of tomatoes is 400 g too. I would think that kale would work, not a green we see a lot of here in NZ. I have an idea that its a bit tougher than spinach, so might need a bit more cooking. I used silverbeet, was really ymmy
