Hi everyone, I've got so much info and great advice from this forum so thought I'd 'give back' by sharing this recipe for a really tasty soup.
I get about 6 big servings from one pot, and reckon it to be about 86 calories a serving.
You can use any veg you want but this is my usual choice...
1 courgette
2 leeks
4 carrots
1 onion
2 peppers (any colour)
2 stalks of celery
2 cloves of garlic (finely chopped or crushed)
2 tins of chopped tomatoes - Lidl do 'chopped tomatoes arriabata' which gives a really nice chilli flavour, but not too strong/spicy. So I use 1 tin of that and one normal tin of chopped tomatoes
1 tbsp of tomato purée
2 vegetable stock cubes
1 litre of water
Just chop all the veg and throw into a pot, along with all the other ingredients. I then pour out a litre of boiling water into a jug and crumble the 2 stock cubes in and stir, then add to the pot. Cover and simmer for about an hour and a half, or whenever you think it's soft enough and that's all there is to it.
I usually make a pot on Sunday and just keep it in the fridge for during the week, and then heat a portion up in the microwave for about 3 or 4 min whenever I fancy it.
I don't purée it or anything as I like my soups to be chunky. It's also really nice with a little bit of cooked pasta / sausage etc thrown in if you want to bulk it up
It's really tasty and very filling - so ideal for fast days.
