This is one I have done for my fast day:
500 grams white button mushrooms, chopped
2 cloves garlic, minced
1 medium onion, chopped
1 medium carrot, chopped or grated
1 beef stock (or vegetable stock) cube
3 cups of hot water
1 tspn thyme (dry or fresh, chopped)
2 table spoons low fat (2 per cent) milk
salt / pepper to taste
Saute the onions, carrots, garlic and mushrooms (no need for spray or oil, as mushrooms have plenty of moisture) till soft.
Add water with stock cube mixed in, salt, pepper and thyme. Simmer for 20 minutes. Blend. Add milk and mix in. Serve.
Recipe is for two. Large bowls. 110 calories each. With piece of whole wheat toast - around 180 calories. Nice fast day lunch or dinner. Good for non-fasters as well.
