5:2 Diet Recipes

This is one I have done for my fast day:

500 grams white button mushrooms, chopped
2 cloves garlic, minced
1 medium onion, chopped
1 medium carrot, chopped or grated
1 beef stock (or vegetable stock) cube
3 cups of hot water
1 tspn thyme (dry or fresh, chopped)
2 table spoons low fat (2 per cent) milk
salt / pepper to taste

Saute the onions, carrots, garlic and mushrooms (no need for spray or oil, as mushrooms have plenty of moisture) till soft.

Add water with stock cube mixed in, salt, pepper and thyme. Simmer for 20 minutes. Blend. Add milk and mix in. Serve.

Recipe is for two. Large bowls. 110 calories each. With piece of whole wheat toast - around 180 calories. Nice fast day lunch or dinner. Good for non-fasters as well.
Oh yummy! I've been hunting for a good mushroom soup for a few weeks :D I'll be trying this as soon as I can get some mushrooms. Would it work with normal mushrooms? Just because they're cheaper :D
Yes any mushrooms would be fine - just do a check on calories to ensure that they equate to white button ones - or adjust the total count as needed. I should say this makes enough for 4 (55 calories per serve) but on fast days I need volume so I eat half the recipe! Also on non fast days I would add half a cup of cream or sour cream instead of the milk!
Oh stop it! I didn't manage to get the veg today so I'll have to pick them up on my next shop :D I'm fasting today and just re-reading that recipe makes me hungry, lol!
This looks amazing, been looking for a soup thats better than a low fat canned one.

Just sat down to a bowl of this and it was sooo good! The only change I made was to add a medium potato just to give it some bulk. Tell you what though, there is no way that will only do me for 2 meals, 3 at least :D There's loads!
Thank you for this, TiareMaori. Now that winter is closing in, I'm looking for some more yummy soup recipes for those cold and dark fasting days.
