At the weekend I made the most simple and delicious prawn dish that is ideal for a fast day hot or cold. I love prawns, and I can't believe how low in calories they are - perfect for fast days.
Waitrose has a new fresh sauce (in the chilled meat department) called Rich and Smoky Red Pepper and Paprika Sauce. It seems to be meant for marinating meat or just as a sauce. It has a deep, rich, warm and smoky flavour that I thought would be ideal over prawns. (I don't work for Waitrose or have anything to do with their sauce, I just think it's amazing )
I used 270g of peeled king prawns, 150g of halved grape tomatoes and a sliced baby pepper, and poured the whole bottle of sauce over it. Then I baked it in a hot oven for 20 minutes until the prawns were hot and the tomatoes soft. This made 4 good portions and myfitnesspal tells me it's only 125 cals per portion!
At the weekend (a feast day) I served it hot with buttered gnocchetti, a big salad and lots of crusty French bread. Today (a fast day) I've just eaten the remaining portion cold with half a Sainsbury mini cornbread and it was seriously good - 255 cals altogether. I think it would also be possible to make a cold dish by just pouring the sauce over cooked prawns and raw tomatoes and peppers - so simple. I'll definitely eat this again.
