A very tasty soup which freezes well
100g skinless, boneless cooked chicken breast
1 Knorr Stockpot, dissolved in
750ml boiling water
50g chopped celery
50g button mushrooms, quartered
50g frozen sweetcorn kernels
10g (2 small) spring onions, sliced
125g (half a pack) Uncle Ben’s White & Wild Rice
Simmer chicken, celery, mushrooms & onions in stock for 10 mins
Remove chicken from pan, add sweetcorn and rice and continue to cook
Divide chicken in 3, chop/shred each portion
Place chicken in bowls (or freezer boxes)
Spoon soup & vegetables over
