Mark Bittman, back when he used to do recipes rather than a column in the NYTimes, had a "101 ideas" series. My favorite one was salads. They're more a list of ingredients than an actual recipe.
Two peaches, cubed
Two tomatoes, cubed
thinly sliced red onion (about an 1/8 of an onion or less)
fresh cilantro, chopped
juice of one lime
hot pepper (I use ground cayenne)
olive oil
It sounds weird, but I promise you: it is so yum. And as long as you go easy on the olive oil, it's perfect for a fast day!
