Turkey laab 213 cals per person

Turkey, Lean Breast Mince (Raw Weight), 500 g 500
Lemongrass Stalk, 1 stalk 10
Fresh Green Chilli 18
Juice of a lime, 10
Squid Brand - Fish Sauce , 1 tbsp. 9
Sweet Chilli Dipping Sauce 15 ml 45
Onion - Red, Raw, 50 g 21
Fresh - Coriander, 1 tbsp
Fresh Mint Leaves, 10 g
Lettuce - Green leaf, raw, shredded 16
Spray oil - 1 cal per spray

Total 639 calories- 213 per person

Deseed and chop the chilli. Remove outer leaf and finely chop the lemongrass.
Gently fry the turkey mince (in batches if necessary) with the chilli and lemongrass, till thoroughly cooked. Set aside to cool.
Mix together the lime juice, fish sauce, lime zest and chilli sauce, then add to the turkey mince. Mix well.

Add diced red onion, chopped coriander and mint and then pile onto beds of lettuce.

You can, if wished, sprinkle with a few chopped peanuts, but I've not included them here.
Thank you for the reminder - I love laab! Also good for puns about "making laab". :grin:

The recipe I've used has just mint, chili, fish sauce, lime juice and shallots. I make it with pork but turkey would be a great lower calorie option. Usually leave the salad leaves (iceberg or little gem) whole and wrap the meat inside the leaves to eat.

Ordered chicken laab in a Thai restaurant once and it was so hot my face went red and my eyes were streaming. I finished the dish but it was actually painful. Will stick to making it at home from now on, I think!
