5:2 Diet Recipes

I made a tuna salad for dinner and realised that it was only coming out at a tiny bit over 100kcals, I have gone over the figures and the amounts of the various food items 3 times and its correct. So I decided to make a quick vegetable soup as well.
By the time I'd finished it only came out at 230kcals.
Now should I make a pudding with what I have in the house to make it up to 500kcals or leave it and have some popcorn later? :grin:
