No need to give up cheese!

As a vegetarian, Cheese isn't a small part of my diet but perhaps that's why i've ended up dieting over the years ; )

There's no getting away from it, cheese piles on the pounds. The great thing about 52 is that I've started to reinvent the way I use it. My latest creation is this courgette bake:

Does anyone have any other ideas for ways I could inject a little cheese into my fast days?

Try this lasagne and / or vegetable bake.

The trick is to use low fat cottage cheese but mix in a small amount of finely ground Parmesan (good quality - ideally Regiano parmigiana). It makes a really low calorie but flavoursome cheese sauce.

Lush ideas!! I didn't think lasagne was attainable on so few calories, how exciting!!

I have lasagne on a normal day. The last one, yesterday to be precise had the dried up remains of a wedge of brie, a small piece of Hereford Hop (from a local tiny farm maker where they make them by hand, really by hand) some cheddar that had lurked too long at the back of the fridge and was rock hard and parmesan to give it a bit of bite.
I must remember to find out when their next display date is. My eldest wants to have a look.

Unfortunately, the blog challenge didn't take off. Only I entered...

Boring, I know but I eat low fat cottage cheese and low fat feta on my fast days. I add them to salads.
