5:2 Diet Recipes

indian greens

3 tablespoons oil (I use coconut)
1 teaspoon black mustard seed
1 teaspoon turmeric
300 g finely chopped cabbage, kale,chard or mustard greens
salt to taste

Into wok or large frying pan put oil of choice, add mustard seed and turmeric. Saute together for just a minute as turmeric goes bitter if cooked too long at high heat.
Stir in chopped greens, add salt and stir fry for a few minutes, mixing up well with the spices. Add a couple tablespoons of water, cover and let the greens steam until it is tender but crisp (1-2 minutes)

4 servings,
4 grams of carbs and 2 grams of fibre,
total of 2 grams of usable carbs
1 gram of protein
11 grams fat

This a nice side for any curry dish.

This sounds delicious. Thanks for posting. It sounds like a lovely way to make the side of greens interesting and more substantial. Just wondering for fast days whether you could cut down a little on the oil (say, to 1 tablespoon) to cut down on calories?

@TiareMaori, yes of course you can! You can also spice it up with lime juice, nam pla, chilli flakes, spring onions and garlic. On non-fast days add unsweetened coconut and some peanuts to it for a Thai flavour.
