We're having a party on Saturday, and I'm making Harira, a Moroccan soup for about 15 people. Decided to make it tonight, as a couple of days in the fridge will only do it good.

Hm. That's a lot of soup to cool down to be able to put it in the fridge!!! Might be a late night.

AND it's not tasty enough, so I'm going to have to work on it. What was I thinking, following recipe and not using garlic? Madness, I tell you, madness!!
If it needs garlic, just add it. Either raw or gently sweated in butter first. It a soup, very forgiving.
I'm going to fry some very gently in butter, with some cumin and coriander and add it as I heat it up on Saturday. It still needs lemon, coriander and parsley too, so I'm sure it will be fine! And maybe some paprika, or that might be over working it.

Have now put the pot in the sink full of cold water, and poured some into another couple of bowls to cool down. Really, really should think ahead more....
Sounds yummy always better too wing it all the best recipes evolve that way!

The last time I had Harira was on the Djema el Fna in Marakesh. All the tourists were going to other stalls but I watched what the locals did. Oh my was it good! Followed it up with some cinnamon tea, again following the locals. So yum.

Also just wanted to say, everything is better with paprika! It's the spice equivalent of bacon.
