If you are still interested in Norfolk, I can recommend the North Norfolk Coast Path. We walked it in 4 days from Hunstanton to Cromer, and it is a lovely, mostly flat route.

Mmmm, quite fancy Bulgaria or Mallorca now....

Have to say for your first walking holiday, it would be nice to be deposited at the start, and more importantly collected at the end of the day, and preferably dropped somewhere with a good bath!
If you do go independently, there are companies who move your luggage for you and I was intrigued to see the mention of having it done by a taxi, that's a good idea.
I guess it depends on whether you prefer to walk as a group or a couple.
If you are not confident navigators, coast paths are good, because you always keep the sea to one side! You still need a map, but it's easier.
